Chef Aram, Sloan, and Eden sitting on the beach

We are SO happy to be back in the swing of things! We’ve been enjoying some great weather, pushing out loads of great meal deliveries to so many fantastic clients, and even sharing some great summer recipes on TV! (More on Chef Aram’s recent WGN segment below, plus, Chef Sarah’s first recipe story!)

Our little Sloane is quickly growing into such a big and confident toddler and we’ve been so blessed to have recently spent time with Aram’s brother, Chef Eden, his sister Samantha, and all of Sloane’s wonderful grandparents. We hope you are all enjoying some new freedoms, lovely sunshine, and great summer treats!

Chef Aram holding a papaya

Hey there!

I’m Sarah, Chef Aram’s wife and partner in cooking, parenting, and travel. Aram and I have gone on some great trips, both national and international and throughout these trips we have had some amazing culinary experiences. I’ve been inspired by these excursions to start what I’m calling a Recipe Story Series. Below is the first story and I truly hope you enjoy it!

Cheers,
Sarah

“SOCCER ON THE BEACH PAPAYA JALAPENO CHICKEN”

When Aram and I went to Costa Rica together, we stayed in Playa Grande, just north of the touristy spot Tamarindo. We got this great Air-Bnb that was essentially a lone studio apartment. It was one big room with a double bed, a little couch, a table with two chairs, a sink, mini fridge, and a two-burner hot plate. Down the road was this great boutique hotel with friendly locals and long-staying tourists. We were down there for almost 20 days, so we made sure to get in good with this small crowd.

As per usual, when we travel, we like to be able to cook at least one meal for ourselves, daily. Most often, it’s breakfast. Some scrambled eggs with sauteed local veggies and some fresh fruit. The papaya from the tin-roofed stand down the road was amazing, and one night near the end of our trip, everyone at the boutique hotel had gotten wind that the young married couple staying at Kai’s “casita” were chefs! We agreed to grill up some dinner for our new group of friends. It’s always fun to show off a bit.

Everyone ran off in different directions to grab ingredients from down the road and up in their pantries. “Get some garlic and fresh jalapenos! And don’t forget the papaya! Everybody loves chicken, yeah?”

So we blended up a great sauce for the chicken. Fresh papaya, charred jalapenos, and a little sea salt brushed off our shoulders from our surf session that day.

While the chicken marinated, we all ran to the beach to play soccer in the gilded surf. The ball skimmed across sand wet and smooth as glass. None of us seemed to care much about the occasional kick in the shin, or being blinded by a final beam of light as the sun sizzled and finally fizzled out into the ocean.

The game ended and we traipsed back across the road. Heat up the grill. Slap on that chicken. A nice pile of steaming rice was the bed for our dinner of grilled chicken and charred peppers. A sprinkling of chopped cilantro was all we needed to finish off our dish. Well, maybe just that and a heavy shot of chiliguaro 🙂

Pura Vida!

Chef Aram and Sarah cooking

Continue to practice social distancing while still enjoying a cooking class over Zoom with your family, friends, and colleagues!

These virtual cooking classes are great for corporate wellness demos, bachelor/ette parties, family reunions, etc. Able to accommodate up to 50 people at once!

HOW IT WORKS:

  1. I create a menu with the designated host, including any and all dietary restrictions.
  2. Next, the menu and a full list of ingredients are sent out to all participating parties.
  3. Each participant shops for their ingredients.
  4. Everyone logs into Zoom at the predetermined date and time, ready to cook!
  5. I lead the cooking class step by step and when finished, we eat!

What a great way to get food to your family, or send to friends who may need assistance! Right now, many are unable to shop for themselves due to over crowded stores, lack of product, compromised immune systems that prevent them from being out in public, or limited mobility due to age or other reasons.

This can be set up for delivery to your family or friends once or twice a week, ensuring there is ample food to eat as we are possibly continuing shut in periods. What a great gift for those that need it most!
